MEET JAIME ORTIZ
Jaime Ortiz, a native of Manhattan, has been deeply influenced by the diverse culinary traditions he grew up with. With roots in Colombia, Puerto Rico, Dominican Republic, Argentina, and various Asian cuisines, he draws inspiration from these rich culinary memories, as well as the teachings of his mentors and a deep respect for classical cuisine. While his training is rooted in French cuisine, he also specializes in Italian and Latin cuisines, and has a passion for exploring the flavors of India and Asia.
His culinary approach focuses on reinventing familiar, comforting dishes while pushing the boundaries of traditional culinary rules. As a young chef, Jaime was recognized with numerous scholarships, awarded Junior Chef of the Year by the American Culinary Federation, and earned multiple silver and gold competition medals. Throughout his career, Chef Ortiz has worked at top restaurants in New York City and Chicago, garnering numerous culinary awards and accolades both as an individual and as part of a team.
As a chef, Jaime has successfully opened several restaurants, both independently and as the corporate chef of Mazzone Hospitality. Notably, he acquired the renowned 677 Prime in early 2017, and in 2019, he added Prime Burger and Shakehouse to his portfolio, an elevated burger spot located in the River Street Market in downtown Troy. In early 2020, he opened TORO Cantina on Wolf Road in Albany, offering a bold twist on Mexican cuisine. In 2021, Sea Smoke Waterfront Grill was born, a premier waterfront dining destination in the heart of Troy.
Chef Ortiz's commitment to creating delicious food, appreciation for culinary diversity, relentless pursuit of knowledge, and wealth of experience have established him as a respected and admired innovator in the Capital Region and beyond.
